How to take care of your ham
To get the best out your ham it is important to take care when you are storing it. In the following paragraphs I will be showing you how I care for my ham, so that it stays moist and does not dry out.
When receive your ham place the ham with the pad of the hoof facing upwards. Try and trim the first pieces of fat off in one piece, which will make it easier to cover the exposed ham between use.
There are a number of ways of keeping the ham moist. I prefer to cover the ham with fat trimmings and then place a sheet of kitchen paper over the top. This provides adequate protection against the meat drying out.
Another way is to wipe the exposed meat with a good Extra Virgin Olive Oil and then cover with cling film.
